    Introduction

Solgaleo, the legendary lion that was introduced to us in Generation 7, has a rather interesting position in SM Ubers. Due to its pretty unique Steel / Psychic typing, Solgaleo is another Xerneas check with solid offensive presence, something Ubers as a tier was missing. It is bulky with base 139 HP and base 89 Special Defense while having a decent base 137 Attack. Its ability Full Metal Body makes it immune to any stat drops, which helps a lot when facing Intimidate or Sticky Web users. Furthermore, it has access to recovery with Morning Sun as well as a really wide movepool that allows it to cover its weaknesses.

However, its typing makes it weak to Ground, Dark, and Ghost, all of which are mainly seen in Ubers. The latter makes it weak against Mega Gengar, which can trap and revenge kill it, while important Ubers threats like Primal Groudon and Yveltal can cause problems as well.
    Sets

    Offensive Set

    Solgaleo @ Leftovers
    Ability: Full Metal Body
    EVs: 252 Atk / 4 SDef / 252 Spd
    Adamant Nature (+Atk, -SAtk)
    - Sunsteel Strike
    - Earthquake / Flare Blitz
    - Flare Blitz / Stone Edge
    - Toxic / Morning Sun

Sunsteel Strike is the main STAB move and allows Solgaleo to deal huge amounts of damage to Fairy- and Rock-types. Earthquake is used for Pokémon that resist Sunsteel Strike, such as Primal Groudon, while Flare Blitz is for coverage against Pokémon that wall this set, such as Ferrothorn, Bronzong, and Magearna. Stone Edge is for Ho-Oh. Toxic can be used to cripple support Arceus formes or generally bulkier walls, while Morning Sun is an option for the users who want Solgaleo to remain in the battlefield for a longer time.

This set has a pretty straight-forward EV distribution, with 252 Attack EVs along with an Attack-boosting nature so that Solgaleo can hit as hard as it can, and 252 EVs in Speed allow Solgaleo to outspeed base 90 Speed Pokémon and support Arceus formes. This is an interesting set that can be used on offensive teams, since Solgaleo can deal decent amounts of damage as well as provide an extra offensive check to Xerneas.
    Specially Defensive Set

    Solgaleo @ Leftovers
    Ability: Full Metal Body
    EVs: 248 HP / 8 Atk / 252 SDef
    Adamant Nature (+Atk, -SAtk)
    - Sunsteel Strike
    - Morning Sun
    - Toxic
    - Earthquake / Flare Blitz

As mentioned already, Sunsteel Strike is the primary STAB move of Solgaleo and is essential for dealing damage to Xerneas, helping to check it. Morning Sun is used for reliable recovery, as Solgaleo can recover from the damage taken when it switches into the Pokémon whose moves it resists. Toxic cripples and pressures opposing Pokémon such as Ho-Oh and Primal Groudon, which can cause trouble to this particular set. Earthquake deals significant damage to opposing Solgaleo and Primal Groudon, and it has a good chance to OHKO Mega Gengar after Stealth Rock. Flare Blitz can be used for coverage for Pokémon that wall this set, such as Ferrothorn, Bronzong, and Magearna.

248 HP and 252 Speed EVs are used so that maximum special bulk can be achieved, and they guarantee that Hidden Power Ground or Focus Blast from a +2 Xerneas will be a 2HKO. Those EVs also help Solgaleo tank a Dark Pulse from a Modest Yveltal, while Choice Specs Yveltal has 50% chance to OHKO. An Adamant nature and 8 EVs in Attack are used so that Solgaleo can OHKO Mega Gengar and deal more damage to bulkier versions of Xerneas.

These two sets can not be compared, since each one serves a different purpose and is used on different team archetypes. The first one can be used on hyper offense or bulky offense, while the second is suggested for balance or even stall teams.
    Other Options
Choice Scarf: This set can be used to allow Solgaleo to revenge kill Mega Gengar or even some Geomancy Xerneas, but being locked in a move makes it weak to setup sweepers. This set is similar to the offensive variant presented above, with Wild Charge in the 4th slot.

Normalium Z: Z-Splash gives Solgaleo a +3 Attack boost and helps it act as a late-game sweeper. It is usually paired with Flame Charge, which gives Solgaleo good coverage and raises its Speed by one stage. The two remaining moves are Sunsteel Strike and Earthquake, for coverage reasons.

Expert Belt: This set can be used in the same way as the offensive set, but it is weak to setup sweepers as well.

Electrium Z: Wild Charge boosted by Z-Move can OHKO Ho-Oh as well as Primal Kyogre and Yveltal after Stealth Rock.
    Checks and Counters
Dark-type Pokémon: Arceus-Dark or Yveltal can both tank a hit and KO Solgaleo with their STAB Dark-type moves.

Ghost-type Pokémon: Mega Gengar is one of the biggest threats, since it can trap Solgaleo and revenge kill it. Other Ghost-types like Arceus-Ghost, Giratina-O, and Lunala can KO it with their STAB Ghost-type moves.

Ground-type Pokémon: Arceus-Ground, Primal Groudon (although it has to be careful of Earthquake), and Zygarde can all take a hit from Solgaleo and then KO it with their STAB Ground-type moves.

Ho-Oh: Ho-Oh can tank any move from Solgaleo bar Stone Edge and then can KO back with Sacred Fire.

Primal Kyogre: Primal Kyogre checks any variant of Solgaleo bar Wild Charge ones and can 2HKO Solgaleo with its STAB moves.

Looking good so far. Z-Splash should probably get mentioned in Other Options since that has the potential to be formidable with the right support. Also, good job on going ahead and getting the banner ready.

Isn't Wild Charge worth a shot in the 3rd slot? Hits Kyogre and Ho-Oh.

No, because you need flare blitz for the steels. I will slash it in some sets in the other options. Plus it does not KO neither ho oh nor kyogre.

C&C - What about Assault Vest? SSTR/EQ/Flare/Wild or Edge.

    Apparently it's a viable set.

    Changing to [Grandma] btw.

From battling against it on the ladder, I discovered that AV Solgaleo is only 3HKO'd by +2 Xerneas, so it might be worth mentioning. However, a key issue with an AV set is that it has no recovery, so it can be worn down after one or two switch ins. It is also incapable of running Toxic, which is another disadvantage when compared to other sets.
